Omakase — おまかせ — literally means "I'll leave it up to you." It is an act of trust between chef and guest, a tradition that demands the highest level of skill and the freshest ingredients.

In our twelve-seat counter, you watch every decision: the knife angle, the rice temperature, the precise brush of wasabi. Each piece is shaped moments before it reaches you. There is no menu because the menu is the ocean, the season, and the day.

From the first glass of sake to the final matcha, every moment is considered. Here is how the evening flows.

The Welcome

You take your seat at the counter. The chef greets you by name — reservations are intimate, and every guest is known. A glass of chilled sake or warm ginjo arrives before a word is spoken about food.

The Journey

Piece by piece, the evening builds. Shellfish gives way to white fish, then rich tuna, then tempera. Each course is explained — where it came from, why now, how it was prepared. You eat at the chef's pace.

The Close

A final item — perhaps tamagoyaki, perhaps something unexpected from the day's catch. Matcha is poured. The evening ends not with a bill, but with a moment of quiet appreciation between chef and guest.
